At Goldsmith Distillery, we created our Georgian London Dry Gin with a simple idea: take the structure and precision of a classic London Dry Gin and give it a distinctly Georgian identity.

The result is a gin made in Georgia that combines a carefully focused botanical recipe, our own hybrid distillation method and the character of Georgian distilling.

What Is London Dry Gin?

London Dry Gin is one of the world’s best-known styles of gin.

Despite its name, London Dry Gin does not have to be produced in London. The term describes a particular style and production method rather than the geographical location of the distillery.

A London Dry Gin is built around juniper, which remains the defining characteristic of the spirit. Other botanicals can be used to create additional layers of aroma and flavor.

Unlike some contemporary gin styles, London Dry Gin traditionally emphasizes a clean, dry and juniper-led profile rather than sweetness.

This makes it an excellent base for classic cocktails such as the Gin & Tonic, Martini and Negroni.

What Makes Goldsmith’s Gin Different?

At Goldsmith Distillery, we take a deliberately focused approach to our Classic London Dry Gin.

Rather than filling the recipe with a long list of botanicals, we use only four botanicals.

One of these four botanicals is wild juniper from Georgia, which forms the foundation of our gin and gives the spirit a direct connection to the Georgian landscape.

We believe that a great gin does not need dozens of ingredients.

With a carefully selected four-botanical recipe, each ingredient has a clear role in the final spirit. The result is a more focused profile in which the individual characteristics of the botanicals can work together without unnecessary complexity.

The challenge is not how many botanicals a distiller can put into a recipe. The challenge is how well those botanicals work together.

Georgian Wild Juniper — The Foundation of Our Gin

Juniper is the defining botanical of any London Dry Gin, and for Goldsmith, we wanted this essential ingredient to have a genuine connection to Georgia.

We use wild Georgian juniper as one of the four botanicals in our Classic London Dry Gin.

This is important to us because our goal is not simply to make a London Dry Gin somewhere in Georgia. We want the spirit itself to carry something of the place where it is made.

The juniper provides the foundation of the gin, while the other three botanicals are carefully selected to complement it and create the final balance.

By keeping the recipe to just four botanicals, we allow the Georgian juniper to remain an important part of the identity of the spirit rather than hiding it behind a long list of competing ingredients.

Our Hybrid Distillation Method

The botanical recipe is only one part of our approach.

At Goldsmith Distillery, we use a hybrid botanical distillation method that combines two different approaches to botanical extraction.

Some of our botanicals are placed directly into the pot during distillation.

The remaining botanicals are placed into a gin basket, where they are exposed to the rising alcohol vapors.

This allows us to combine direct botanical extraction with vapor infusion in a single distillation process.

Botanicals placed directly into the pot are immersed in the spirit during heating and distillation.

This method allows the spirit to extract deeper flavors and characteristics from selected botanicals.

Botanicals in the Gin Basket

The other botanicals are placed in the gin basket.

Instead of being immersed directly in the liquid, they are exposed to the alcohol-rich vapor as it travels through the still.

This vapor infusion method allows us to extract selected botanical aromas in a different way.

Why Combine Both Methods?

This is the reason we call our process a hybrid method.

We don’t believe every botanical should be treated in exactly the same way.

Some ingredients benefit from direct extraction in the pot.

Others are better suited to vapor infusion.

By dividing our four botanicals between these two methods, we can control how each one contributes to the final spirit.

The result is not simply a collection of botanical flavors. It is a carefully structured gin in which each ingredient has a purpose.

Why Only Four Botanicals?

Modern gin has become famous for increasingly complicated botanical recipes.

Some gins contain ten, fifteen, twenty or even more botanicals.

That can certainly create interesting spirits, but complexity does not automatically mean quality.

For our Classic Gin, we chose another direction.

Four botanicals are enough when each one is selected carefully and distilled correctly.

And at the heart of those four botanicals is wild Georgian juniper — the botanical that defines the character of gin itself.

A smaller recipe also gives us greater control over consistency. Every botanical has an effect on the final aroma, flavor and balance of the gin, so reducing the number of ingredients allows us to focus closely on how they interact.

Our goal is a gin that is easy to understand but not simplistic.

It should be recognizable as a London Dry Gin while still having enough character to make you want another sip.

The Foundation: Georgian Wild Juniper

Every serious London Dry Gin starts with juniper.

For Goldsmith, we wanted that foundation to have a direct connection to Georgia.

Our wild Georgian juniper is one of the four botanicals used in our Classic London Dry Gin and plays a central role in defining the spirit.

Juniper provides the characteristic botanical foundation that makes gin recognizable as gin.

But good gin is not simply about adding as much juniper as possible.

The challenge is balance.

Our Georgian wild juniper needs to remain clearly present while the other three botanicals contribute their own characteristics without overwhelming the spirit.

This is where our four-botanical approach and hybrid distillation method work together.

Why We Made a Georgian London Dry Gin

Goldsmith Distillery was founded in 2019.

Our first distillery was small and built largely by hand, with the help of family and friends.

From the beginning, our philosophy has been to build our own approach to distilling rather than simply copy what already exists.

Creating a London Dry Gin in Georgia is part of that philosophy.

Gin is an international spirit. People understand its basic character whether they are in Tbilisi, London, New York or Tokyo.

But that does not mean every gin has to taste the same.

We wanted to create a gin that follows a recognizable international style while carrying the identity of the place where it is made.
